Well I should probably say this is Ronseal (it does what it says on the tin). It is a sour, it is yeasty, and it tasks of barrel aging, but why? Barrel aging can be great for acidic ciders, wines etc, and for mellowing spirits / imparting flavours. Not sure that works with a sour beer. A bit niche I’d suggest.
