Well I should probably say this is Ronseal (it does what it says on the tin). It is a sour, it is yeasty, and it tasks of barrel aging, but why? Barrel aging can be great for acidic ciders, wines etc, and for mellowing spirits / imparting flavours. Not sure that works with a sour beer. A bit niche I’d suggest.

One of Wild Beer’s most accomplished brews. Aged in oak and fermented wildly, as you’d expect, it has a complex and intriguing flavour bill.

Sour, but not too tart and with lovely rounded barrel aged depth of flavour.

Seriously complex, so much going on in this from the wood and the yeast.

5 stars doesn’t do this justice. I could get poetic about this beer. It’s heady complexity was pretty mind blowing. Wow
