Scotland is prolific with soft fruit and berry growing, we want to celebrate that with the farm to fermenter series. We’re incredibly lucky to live so close to such an abundance of fruit growing right on our doorstep. 🏴
Our ambitious new series is about getting one step closer to the roots of these fruits and bringing them from field to fermentation in 24 hours. ⏳
It’s a great opportunity for us to meet the local hero’s producing these amazing fruits. Working closely with nearby farms to time our brewing schedule with their harvesta. The result is the freshest fruit flavour, transporting you to a sun dappled raspberry vine and the taste of those berries that don’t make it into the basket… 🤤
First up is the mighty Scottish Raspberry from @petermarshallfarmsfruit – an ideal partner for our modern sour beer. Our house mixed culture’s hot fermentation gives a delicate lemon like acidity and the resulting base beer is a perfect platform for the tart raspberries to shine.
