The style likely came about when monks did an additional sparge of mash to extract leftover sugars. Once collected, it is brewed into a super sessionable beer. “Who is Brett?” you may wonder. It’s actually short for brettanomyces, a wild yeast strain that adds bubble and fizz with amazing tropical fruit flavours to IPAs.
