Bière de soif is a hybrid between the world of beer and wine. The term “de soif” means uncomplicated, full and comprehensive wines, focused on high drinkability. We present almost an annual beer, which after a short fermentation in the tank went for a long time into wooden barrels with a mixture of wild yeast and bacteria. During the harvest, we collected fresh, local grapes of the Dornfelder variety and added them to the fermenting beer. After separation from the fruit, we obtained a product with a deep burgundy color, full of aromas of forest fruit (berries, blackberries); plums and cherries, wild flowers, oak trees and broadly understood funky. The taste is slightly sour notes of forest fruit, tannininess and the characteristic heavy aftertaste of Dornfelder red wine

Delicious drink – wine like as you would expect.

Aromas of forest fruit and barrel wood. Pours a dark cherry colour in the glass. The taste is like a good red wine, but the acidity you usually get in a wine is replaced by sourness. You get fruity sour blackberry, cherry and plums, this then leads into smoky oak from the barrel and it ends on a fruity, dry red wine aftertaste. Overall, it’s smooth, fruity and sour. If your a fan of both sour beers and red wine, then this is the one for you.

Looks & tastes like red wine. Sweet almost jammy plums & berries, & a dry tannic character. 2nd of this series I’ve had & both have been excellent

This is about the closest, beer? Wise, as you’d get to just be drinking red wine! Deep burgundy, zero head. Hardly sour at all 😮 Fruit esters aplenty 🍇 …. ok cut to the chase! I like it for what it is! It’s NOT beer imho 😂🇵🇱
