Bière de soif is a hybrid between the world of beer and wine. The term “de soif” means uncomplicated, full and comprehensive wines, focused on high drinkability. We present almost an annual beer, which after a short fermentation in the tank went for a long time into wooden barrels with a mixture of wild yeast and bacteria. During the grape harvest, we collected fresh, local Pinot Noir grapes and added them to the fermenting beer. After separation from fruit, we obtained a product of a pink color, full of aromas of blackcurrant, strawberries, raspberries, spices: white pepper and clove, as well as broadly understood funky. The taste is characteristic acidity of red fruits, tart tannicity and deep dryness of light Pinot Noir wines.

So much red wine character! Cherries, berries, grape & soft tannins. Then the wild fermentation kicks in for a deep complex funk.
