I don't know why I was surprised at 9.2% but it has a lovely warming sensation off the back of each sip which builds nicely, as do all the flavours as you head down the glass.
Deep, rich Oak and vanilla from the barrels is not overpowering but serves to add just the right amount of contrast to the fermented cherries which gives the perception of sweetness against the sour. A pleasant tart from the wild yeast and bacteria offset this well allowing you to reach for the flavours – fighting against the balance in each gobfull.
My only problem with this is that it's not Beery enough and almost feels more like a fruit wine with a more complex build.
A lovely drinking experience but not one I'd care to repeat.

Another version from the series “Bière de soif”, which are hybrids forming a bridge between the world of wine, cider, local agriculture and beer. We present almost an annual beer, which after a short fermentation in the tank went for a long time into wooden barrels with a mixture of wild yeast and bacteria To the final product we added huge amounts of fresh local cherries, and then we referenced beer for a month in a bottle! As a result, we received a product with a delicate red color, intense aroma of cherry, tartan tartar, spices and broadly defined funk as in dry Burgundy wines.
