Pressure Drop was formed in 2012 and sold their first beers in January 2013. Graham, Sam and Ben describe themselves as three blokes in a railway arch doing lots of cleaning and trying to make the tastiest beers they can. Pressure Drop is another brewery Honest Brew has meet through the LBA. The first beer we tried from Pressure Drop was their Pale Fire, a cracking beer, and we keep going back for more. Make sure you try the Stokey Brown as well.
Beer and Bread have been showing off the magic of yeast for thousands of years, Wild Beer Co. decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
Based on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. Fermented with 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.
It has been slowly fermenting, maturing and souring for 4 months in the barrels and will continue to evolve and develop in the bottle. There is a lovely gentle rounded fruity sourness to this beer. It isn't harsh, and its low alcohol makes it the perfect brunch beer to enjoy with smoked salmon and scrambled eggs on some Hobbs House Bakery Sourdough. Serve chilled.

Now what is this? A smoked beer?? It really isn’t as crazy as it sounds. 250 years ago virtually all beers were smoked (it’s true, Google it!), but with the dawning of the industrial revolution most of the smoke lifted. However, in the German town of Bamberg the flame has quite literally been kept alive and to this day the town’s brewers produce world renowned beers brewed with their own special rauchmalz (beechwood smoked malt). 8 Wired have taken their best porter recipe and added a good measure of that same Bamberg Rauchmalz. The smoke mingles beautifully with the rich, dark roasted chocolate flavours of the porter without being overpowering. Although it pairs extremely well with smoked seafood, barbeques, strong cheeses and hearty stews, its food friendliness isn’t limited to savouries; chocolate and caramel based desserts are great companions too! Trust us; it really isn’t as crazy as it sounds.

For this beer Weird Beard went back to the old school, taking inspiation from the original brown porter style. But they couldn't just stop there - they had to bring a little Weird Beard flavour to the jam. They took the best elements of a brown porter, dialled up the ABV, added generous amounts of El Dorado and Summit hops, and dropped some big heavy peat notes in the mix. The result is a beer like no other. Complex, bursting with hop character and full of peat, this beer is as innovative and unique as its namesake.

Barrel-aged and using a variety of yeasts; a study in patience.
Barrel ageing, blending and using different yeasts, this embraces Wild's love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.
Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

This is the second in Weird Beard's Single Hop series which allows them to showcase their creative side within the constraint of using a single hop. It showcases the Nelson Sauvin hop so you can expect elderflower and gooseberries blended with a Saison yeast character. This beer uses a very traditional Saison grain bill of Pilsner, Vienna and Munich malts but the Nelson Sauvin adds a new world twist, resulting in a beer that's full of flavour without losing its Saison roots.
