This third release in the Tom Newell series was originally brewed back in February when Jess & Tom from Young Masters Brewery, Hong Kong, came by on their UK tour. They are at the forefront of craft brewing in South East Asia and carry a reputation for fantastic barrel aged releases and so it was a no brainer to work together on something decadent. For the base beer we put together an adjunct-free, rich and viscous imperial stout which turns the spotlight on the flavour variety of malt. Starting with an English ale barley malt, we added munich malt and flaked oats to build in body and extra mouthfeel and then selected a range of roasted grains including chocolate rye to add the dark colour, plenty of dark chocolate and light roast coffee notes and an extra touch of earthy spice. Finished off with some crystal rye plus medium and dark crystal barley malts for dark fruit and cinder toffee touches, we had a wonderfully complex stout on our hands which after a month of fermentation and conditioning, transferred to a selection of freshly emptied French burgundy and pinot noir barrels for 6 months to pick up the rich red grape, light oak and red cherry flavours they held.

Brilliant beer. The barrel aging in wine barrels added really nice flavours. First try of a wine barrel aged stout will definitely be seeking out others after this.

Pitch black with almost no head. Aroma of red wine, oak, berries, liquorice. Taste is rich, chocolatey malts, liquorice, red grapes, cherry, hints of coffee, toffee, oak, wine, warming alcohol. Outstanding use of red wine barrels, by far the best wine barrel BA stout I've had.

A lot going on here, and sadly too much for the beer to handle. The sharp grape notes are uneasy with the sweetness and the heavy strength and the whole thing topples over. Might be bearable in a smaller can, but not great.
