Jackie O’s sour programme started in 2008 with 3 carboys, a few smack packs of culture, and luck. It’s now a warehouse with 400+ barrels, and a thoughtfully designed room for mixed fermentation. Elle starts as a saison fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful brew celebrating a passionate vision.
