Description
This saison takes its name from the famous romance of Puccini’s opera. A rustic drink, with a fine perlage and a marked acidic presence. Citric, spicy and white fruit notes are softened by floral hints and complexity given by the wood. Nessun Dorma is a refreshing beer with a wild depth, which will get even better if you have the willpower to age it.
The must, made with a good percentage of unmalted wheat and oats , receives a delicate hopping of noble hops .
Following fermentation in steel through Saccharomyces, the beer ages for 6 to 8 months in tonneaux and barriques (which previously contained wine), with contamination of Brettanomyces and lactic bacteria, recovered from the barrel itself.
At the end of the refinement, we are going to blend the contents of all the vats with a small percentage of the same. Dorma young, recently entered the cellar, to add freshness, elegance and body to the character of the beer.
The term Vieille (literally old / ancient) refers to the Saisons historically produced in Hainaut (French-speaking province of Wallonia, in southern Belgium). The farmers produced this beer at the end of the winter / spring, and then consumed it in the summer to fortify themselves during long working days.
The rustic production processes of that time, together with the ageing before the beer was consumed, gave rise to wild fermentations (contamination of wild yeasts and bacteria) which we have replicated in this blend.
