Really wasn't sure at first: flat, with a potent lactic sourness – had it gone bad? But it grew on me as I began to appreciate the complexity. Vinous, with fruity, woody notes and a brandy sweetness. Challenging but rewarding.

Today we present CERBERO copper label: a 9.8% old ale aged for one year in Brandy villazarri barrels (Castel Maggiore). A beer that we have been waiting for a long time in the cellar and on whose project – Old Ale interpretation – we have been working for some years: our idea was to bring to the barrel the reinterpretation of a classic English style – characterized by dark tones, malty depth and high alcohol content – maintaining some of its peculiar and fascinating historical characteristics, such as aging in wood and bacterial contamination with Britain’s indigenous yeast, brettanomyces. The malty tones – cocoa, hints of biscuit and caramel – interpenetrate the perceptible hints of Brandy Zarri distillery: grapes in alcohol, leather, vanilla, dried fruit and black tea leaves. The aromatic bouquet is embellished with wild notes of brettanomyces (leather, fruity freshness) and oxidative depth, as per the historical interpretation of the style. Cerbero is a meditation drink, with a silky smoothness and pleasant sensations of warmth in the throat, softened on the palate by a slight rustic acidity. You can also find it in our online shop. “What is that dog that craves barking, and then racqueta that ‘the meal bites, because only to devour it intends and fights, so did those gross faces, of the demon Cerberus, that’ swarms, souls so, that ‘to be deaf ”- Dante Alighieri
