A tribute to the Saison of the past: beers that were brewed by farmers in the Belgian region of Hainaut (part of Wallonia) during the late winter and spring, to be drunk in the summer. These beers were often the result of a “wild” fermentations, in which the Brettanomyces gave a rustic and winey character to beer, but made very fine and pleasant in time.
This beer has been fermented using a specific strain of Brettanomyces and aged in bottle at least 10 months before being put on sale.

8 Wired – Saison Sauvin 7%
Beers, NZ Craft Beer Collective£3.69Saisons have been around for ages. Traditionally brewed by Belgian and French farmers to provide refreshment during harvest. These hardworking folk never imagined that centuries later their style of brewing would inspire brewers from all over the world. As all 8 Wired's beers, this is a very modern (you might say new world) interpretation of this style. Based on tradition they have used a French Saison yeast, providing a plethora of funky, earthy, very "Belgian" flavours. From there they have upped the ante a fair bit by loading the kettle with punchy Nelson Sauvin hops. Unlike the original, this is not a beer meant to be drunk by the gallon. Moderation is the key for full enjoyment of all great beers.

Tiny Rebel – Super Saison 7.4%
Beers£2.89KAA ME HAA ME HAAAAAA! Tiny Rebel have turned the power level of their brewhouse to OVER NINE THOUSAAAAAAAAAAND. Saisons are traditionally brewed in cooler months ready for the sunny days of spring and summer. So during a wet March they got to work on something that would be perfect for when the sun finally comes out. A classic Wallonian saison develops earthy, peppery notes in fermentation. Kaffir Lime leaves and Lemon verbena give the beer a big whack of citrus, which is supercharged by three mega-citrussy hops. A truly Super Saison!
