It really isn’t as crazy as it sounds. 250 years ago virtually all beers were smoked (it’s true, Google it!), but with the dawning of the industrial revolution most of the smoke lifted. However, in the German town of Bamberg the flame has quite literally been kept alive and to this day the town’s brewers produce world renowned beers brewed with their own special rauchmalz (beechwood smoked malt). 8 Wired have taken their best porter recipe and added a good measure of that same Bamberg Rauchmalz. The smoke mingles beautifully with the rich, dark roasted chocolate flavours of the porter without being overpowering. Although it pairs extremely well with smoked seafood, barbeques, strong cheeses and hearty stews, its food friendliness isn’t limited to savouries; chocolate and caramel based desserts are great companions too! Trust us; it really isn’t as crazy as it sounds.

This Berliner Weisse’s bold and colourful labelling reflects the tropical flavours that bubble beneath the cap. Mango, lychee, lemon, lime and grapefruit flavours are all waiting to escape from this moderately bitter, sour and exceedingly juicy brew.

Famously described as a beer you'd liken to tonguing your Grandad (i.e. whisky and cigars), it is the Yeastie Boys favourite of their beers. Don't say we didn't warn you. This is one polarising mother of a brew.

Renaissance – Voyager – NZ IPA 6%
Beers, NZ Craft Beer Collective£3.39Inspired by the boldly hoppy Ales of old that were exported from Britain to the furthest corners of her vast and glorious empire, Voyager I.P.A. is a rich satisfying Ale with an emphatic hop bite. Renaissance brew this beer with pale ale malt from Canterbury, and small additions of European specialty malts to yield a malt base on which to build its hop edifice. Renaissance generously hop it with two Kiwi hop varieties for bitterness then finish it with Fuggles (as a nod to I.P.A.’s British origin) and New Zealand bred Riwaka hops for a spicy floral finish. The result is an ale that will coat your palate with hops and it you will leave you in no doubt that you have had a beer! It is just as good carbonated and chilled as it was when it was flat and warm!

Renaissance – MPA – DIPA 8.5%
Beers, NZ Craft Beer Collective£3.79Marlborough Pale Ale, or M.P.A. for short, is a uniquely kiwi take on an American Double India Pale Ale and is the biggest beer in their range. M.P.A. is a released seasonally as it uses the new seasons hops every southern hemisphere autumn. In the current vintage release (2009) Renaissance has chosen to use a single variatal, Rakau, a hop recently released by Hort Research. M.P.A. showcases the lovely piney, apricot and stone fruit flavours that Rakau is capable of, balancing its flavour and bitterness against a strong malty full bodied Ale. M.PA. is massively hopped. A normal brew has 3 or 4 hop additions, M.P.A. had 13 additions, and this yielded an ale with approximately 120 hops per bottle. Most people are unaware of how any single hop varietal tastes. One sip of M.P.A and they will know Rakau!

Beers, NZ Craft Beer Collective£2.69When the team behind the Great Australasian Beer SpecTAPular asked the guys to create a special beer for their 2012 festival, they started by searching for musical inspiration from their Australian homeland. The tunes led them on a wild conceptual ride but they ended up settling on this hugely floral India Pale Ale that is "dry-leafed" with a massive load of Earl Grey Blue Flower tea. Gunnamatta - the instrumental opening track of Paul Kelly's 2004 album Ways and Means - refers to a beach break on Victoria's Mornington Peninsula and had us thinking of good friends, cups of tea, surf, beer and rock 'n' roll! As Paul Kelly says himself: "Deeper water, leading me on."

8 Wired – Saison Sauvin 7%
Beers, NZ Craft Beer Collective£3.69Saisons have been around for ages. Traditionally brewed by Belgian and French farmers to provide refreshment during harvest. These hardworking folk never imagined that centuries later their style of brewing would inspire brewers from all over the world. As all 8 Wired's beers, this is a very modern (you might say new world) interpretation of this style. Based on tradition they have used a French Saison yeast, providing a plethora of funky, earthy, very "Belgian" flavours. From there they have upped the ante a fair bit by loading the kettle with punchy Nelson Sauvin hops. Unlike the original, this is not a beer meant to be drunk by the gallon. Moderation is the key for full enjoyment of all great beers.

If you’re feeling politically incorrect try it with your favourite cigar, or a dram of your best single malt whisky. Or, if your tooth is sweeter, why not jump in at the deep end with the most decadent dessert of all; half a bottle in a glass with a generous scoop of vanilla ice cream on top (beer geeks like us know it as the Imperial Stout Float). Or simply enjoy it on its own as a decadent dessert or night cap - the perfect winter warmer.

Seasonal, Beers, NZ Craft Beer Collective£9.89This is an intensely sour brew. Aged in wine barrels for up to 2 years, then heavily dry hopped with the unique flavors of all NZ hops. This is a very complex and super sour brew that was a massive hit for 8 Wired at GABS Auckland. A good amount of expletives were shared over its super sourness and heady, oily resin and heavy funk characteristics. A must try for the sour lover!

Yeastie Boys – Bigmouth – Session IPA 4.4%
Seasonal, Beers, NZ Craft Beer Collective£2.69Bigmouth strikes again! Bigmouth is an extra pale, unfiltered hoppy session ale with a bold tropical and white wine notes from the Nelson grown New Zealand hops. A Luscious mouth feel, from the wheat and oats, carries the hop flavour across the palate before easing out with a dry (rather than bitter) moreish finish. A refreshing beer that's as at home at the beach or in the shower, as it is with canapés or at the dinner table.

But unlike an American IPA, which will mainly challenge you with grapefruity and pine-like flavours and aromas, the kiwi hops used in HopWired produce something more like a tropical punchbowl: Passion fruit, limes, oranges and Sauvignon Blanc grapes to name but a few.

8 Wired v Modern Times – Half Way to Whangarei – Saison 5.5%
Beers, NZ Craft Beer Collective£6.99A collaboration with Modern Times out of San Diego called Halfway to Whangarei. 8 Wired brewed a Grisette and fermented it in one of their foeders with a Modern Times house yeast strain of Brett. Halfway to Whangarei turned out as a light bodied, complex, fruity and slightly tart Grisette which is a farmhouse style of beer the coal miners used to drink.
